Sweet Summer Salad

For when you don't want summer to end...

My sister has hated salad for as long as I can remember. She goes as far to remove lettuce + tomato from her burgers. Lately, she has had a change of heart but only towards kale salads. While she was in town visiting last week, she taught me how to make the only kind of salad she likes to eat. and I have to say, it was delicious! It combines beautiful fresh summer ingredients with organic kale and a raspberry vinaigrette. 

Sweet Summer Salad

(Serves 4-6)

Ingredients:

3-4 Kale Stems (leaves pulled from stem, washed + dried)

1 Nectarine

1/2 lb Strawberries

1/4 cup Dried Cranberries

1/2 cup Candied Cashews

1/4 cup Feta Crumbles (remove for vegan option)

1 handful Sunflower Seeds

2 tbsp. Chia Seeds 

1/2 cup Raspberry Vinaigrette

Assembly:

  1. Wash + dry all produce.

  2. Pull kale leaves from stem and place in large bowl.

  3. Slice fruit.

  4. Top kale with all ingredients (Above measurements are a guess. I just used about a handful of each topping).

  5. Toss in vinaigrette + serve.

I have since made the salad on several different occasions by using what fruits look best at the market. I have substituted plums + blueberries for the nectarines + strawberries and used hemp seeds instead of chia seeds.  It turned out just as tasty so feel free to use what's leftover in the fridge or what's in season.
